Set the source in Airfoil to the application you're using to listen to Spotify. I'm in the states so I don't have access to Spotify but from their website it looks like the app is Spotify Open? In other words the Airfoil source needs to be the Spotify application not Default System Input or other audio source. Applications appear above audio sources in the Airfoil source drop down menu. If no applications are listed select Other Application and use the resulting Open/Save dialog to navigate to your Spotify app.
